Lacy pancakes with sour cream are a true delight of Russian cuisine. Their thin, lace-like edges resemble delicate spider webs, and the soft flavor with light creamy notes makes them perfect for breakfast or a cozy tea time. Historically, pancakes hold a special place in Russian culture, symbolizing the sun and warmth. They are served during Maslenitsa and are an essential attribute of home gatherings. In this recipe, the batter is made with milk, creating an airy texture, while the addition of butter gives them tenderness. They can be served with various fillings—jam, honey or fresh berries—but the classic version with sour cream reveals the full depth of traditional flavor. Serve them hot, smeared with butter, and enjoy the tenderness of each golden-brown edge.

1
The milk should not be cold. Add eggs (also at room temperature), salt, butter, and flour to the milk. There shouldn't be too much butter, but don't skimp on it.
- Milk: 1 l
- Chicken egg: 4 pieces
- Refined oil: 3 tablespoons
- Wheat flour: 400 g
2
Add enough flour so that the dough resembles diluted sour cream, meaning not too liquid. Add sugar if the filling is supposed to be sweet. If it's a meat filling, sugar is not needed.
- Sugar: to taste
3
Cook in a well-heated pan in a thin layer until golden, brush each with oil, serve.
- Refined oil: 3 tablespoons
