Grate the zest of half a lemon finely.
- Lemon: 0.5 piece

Take one egg, separate the white from the yolk.
- Chicken egg: 2 pieces

Mix flour and sugar, add butter in pieces, one whole egg and one yolk (keep the egg white for brushing) and zest. Knead the dough.
- Wheat flour: 260 g
- Sugar: 150 g
- Butter: 150 g
- Chicken egg: 2 pieces
- Lemon: 0.5 piece

Roll the dough into a ball, cover it, and let it rest in a cool place for 30 minutes to an hour.

Roll out the dough to a thickness of ½ cm, cut out circles using a glass or a special cutter. Cut and remove a small circle from the center of each circle.

Place the obtained rings on a sheet and brush with beaten egg white.

Chop the almonds with a knife not too finely.
- Almond: 100 g

Sprinkle the rings with chopped almonds or nuts and place in the oven at 180 degrees for baking for 10-15 minutes.
