Phoebe's Oatmeal Cookie Ice Cream Sandwiches

Preheat the oven to 190 degrees. Line the baking tray with parchment paper.

In a large bowl, combine and mix softened butter, two types of sugar, vanilla extract, and eggs.
- Butter: 230 g
- Sugar: 100 g
- Brown sugar: 200 g
- Vanilla extract: 1.5 teaspoon
- Chicken egg: 2 pieces

In a small bowl, combine and mix flour, cinnamon, salt, baking soda, oats, and raisins.
- Wheat flour: 230 g
- Ground cinnamon: 1 teaspoon
- Soda: 1 teaspoon
- Oat flakes: 3 glasss
- Raisin: 1 glass
- Salt: 1 teaspoon

Add dry ingredients to the liquid and mix thoroughly for 3 minutes until a smooth dough forms.
- Wheat flour: 230 g
- Ground cinnamon: 1 teaspoon
- Soda: 1 teaspoon
- Oat flakes: 3 glasss
- Raisin: 1 glass
- Salt: 1 teaspoon

Form balls from the dough the size of a tablespoon and place them on a baking sheet. Bake for 10 minutes until the cookies are golden and their edges are browned.

Let the cookies cool on the baking sheet for a few minutes. Then transfer them to a rack to cool completely.

Once the cookies have cooled, place a large spoonful of softened (but not melted) ice cream on one cookie, cover with a second cookie. Press to bond the cookies together firmly and place in the freezer. Repeat with the remaining cookies. Chill in the freezer for 15 minutes and serve.
