Pie "Wolf's Puff Pastry

Puff pastry filo, in which homemade cottage cheese with apples, honey, cognac and cinnamon is packed. Recipe from the city cafe "Friends" in Tver, where the lion's share of the menu consists of Georgian cuisine. The recipe is taken from the book "Geography to Taste with Nika Ganich.

In a buttered baking dish, layer the phyllo dough: brush with butter (100 g) every two layers and sprinkle with cinnamon and sugar.
- Butter: 130 g
- Ground cinnamon: 5 g
- Sugar: 100 g

Lay six to eight layers and compact.

Add honey, vanilla sugar, egg, cinnamon, cream to the cottage cheese 'Maklarin' and mix until smooth.
- Cottage cheese: 500 g
- Flower honey: 50 g
- Vanilla sugar: 3 g
- Chicken egg: 1 piece
- Cinnamon: 3 g
- Cream 33%: 100 ml

Peel the apples and slice them into 2 mm thick pieces. Melt sugar in a pan until caramelized and sauté the apples until half-cooked, then add 30 g of butter and cognac.
- Apple: 200 g
- Sugar: 100 g
- Butter: 130 g
- Cognac: 50 ml

Combine the roasted apples with the cottage cheese mixture and mix until smooth. Spread into a form with phyllo dough and level it out.
- Filo dough: 500 g

Bake the pie in the oven at 200 degrees for 15-20 minutes.

Decorate with powdered sugar and fresh berries.
