Melt the chocolate in a water bath with butter
- Dark chocolate 70%: 250 g
- Butter: 350 g

Separate the yolks from the whites, beat with a mixer with half the sugar until frothy.
- Chicken egg: 6 pieces
- Sugar: 250 g

While continuing to beat the yolks, add chocolate, almond flour, and orange zest. Mix everything together.
- Dark chocolate 70%: 250 g
- Almond flour: 360 g
- Oranges: 1 piece

Whip the egg whites and the remaining sugar separately until frothy. Combine with the obtained mixture.
