    Pierce the eggplants with a fork or skewer, bake in the oven at 210 degrees for about 30 minutes. Remove, transfer to a container, cover with foil or film. Let cool.

    Then cut the eggplant lengthwise and scoop out all its flesh into a separate bowl. Add tahini, sesame oil, 3 cloves of garlic (chopped), lemon juice, salt, and pepper.

    Roast 1 kg of red bell pepper in the oven for about 30 minutes at 180 degrees. Then remove and place in a heatproof container, cover with a lid or plastic wrap. Allow to cool completely. Carefully peel off the skin with a vegetable knife or by hand, and break the pepper into pieces of red flesh. Discard the seeds and skin.

    Peel 1 kg of firm tomatoes (make a cross-shaped cut on the opposite side from where the tomato was attached to the bush, dip in boiling water for 30 seconds, then into cold water). Carefully peel the skin with a vegetable knife.

    Cut each tomato into 4-6 equal pieces and remove the seeds. Place on a baking sheet lined with parchment paper, drizzle with olive oil, garlic pieces, thyme leaves, salt, and sugar.

    Bake for 2 hours at a temperature of 70–80 degrees. Then cool down. It can be stored in a tightly closed jar with the addition of olive oil.

    Whip the egg whites until they look like bath foam. Mix flour, baking powder, 10 grams of salt, and 40 grams of sugar; add milk and softened butter (at room temperature), then fold in the whipped egg whites. Mix well. It's ideal to use a hand mixer on low speed. The dough is ready.
