In a bowl, mix flour, poppy seeds, sugar, baking powder, and salt. Add the juice and zest of 2 lemons, yogurt, and a few tablespoons of water if needed to knead a firm dough.
- Rice flour: 180 g
- Almond flour: 150 g
- Cane sugar: 100 g
- Lemon juice: 40 ml
- Lemon zest: 2 pieces
- Soy yogurt: 125 g
- Salt: pinch
- Baking powder: 0.5 teaspoon
- Poppy: 2 tablespoons

Form small balls from the dough by hand and slightly flatten them. Place the cookies on a baking sheet lined with parchment paper.
