Cut the biscuit to fit the bottom of the mold where the tiramisu will be assembled.

Pour cognac over the biscuit. About 30 ml is needed for a 25 cm diameter cake layer. While the cognac is soaking into the biscuit, prepare the cream.
- Cognac: 30 ml

Separate the whites from the yolks. Add powdered sugar to the yolks and whisk with a mixer. This takes about 3-4 minutes (a foam should form). It's better to mix the powder with a spoon first, otherwise the mixer will lift the powder into the air.
- Powdered sugar: 40 g
- Chicken egg (large): 6 pieces

Add mascarpone. Whip until smooth. The mixture should be similar in consistency to thick sour cream.
- Mascarpone cheese: 500 g

Pour the mixture over the biscuit.
- Biscuit: 1 piece

Leave in the refrigerator for 12 hours.

Sprinkle cocoa on top, serve at the table.
