Thoroughly wash the ripe figs, dry them, and peel off the skin. Place the peeled figs in a deep dish and mash them.

In a pot, mix water and sugar, place on low heat and bring to a boil. Add figs and cook for about 1 hour on low heat, stirring occasionally.

In Abkhazia, pastila is dried in the sun on a wooden board. If this method is unavailable, cool the puree slightly, spread it on a parchment-lined tray, and place it in an oven preheated to 100 degrees for 4-5 hours. Pastila can also be made in a dehydrator.
