Turkish simit bun

In Turkey, bagels are made on every corner, and they are all generously sprinkled with sesame seeds. They are easy to make, but the dough will take a total of one and a half hours to rise. Simits are especially good for breakfast, with butter, jam and strong spiced coffee.

Mix sugar, yeast, and 125 ml of warm water, and let it sit for 3-5 minutes.
- Sugar: 1 teaspoon
- Dry yeast: 4 g
- Vegetable oil: 2 tablespoons

Mix flour with salt and vegetable oil separately
- Wheat flour: 180 g
- Salt: 0.5 teaspoon
- Vegetable oil: 2 tablespoons

Then add water with yeast and knead a uniform dough.
- Wheat flour: 180 g
- Dry yeast: 4 g

Cover it with plastic wrap and place it in a warm spot for one to one and a half hours.

Divide the dough into 4 equal parts, roll each into a long sausage, then fold it in half, twist the ends of the dough together in a spiral and connect the edges to form a bagel.

Mix molasses with 150 ml of water.
- Syrup: 2 tablespoons
- Vegetable oil: 2 tablespoons

Dip the simit in this mixture on both sides, then dip it in sesame and place it on a baking tray.
- Sesame: 1 glass

Do the same with the other buns, cover them with a towel, and leave for 30 minutes.

Bake the simits in an oven preheated to 200 degrees for 15 minutes.
