Sift the flour together with the starch into a deep bowl.
- Wheat flour: 200 g
- Potato starch: 1 tablespoon

Cut the chilled butter into pieces, add it to the flour, and rub it with your fingertips until it resembles fine crumbs (do this quickly to prevent the butter from warming up). There should be no large lumps left.
- Butter: 90 g

Sift powdered sugar into the obtained mass, add salt and vanillin. Mix with a spoon. Then add a whole egg and yolk and continue mixing with a spoon until the crumb becomes moist.
- Powdered sugar: 75 g
- Salt: pinch
- Vanillin: pinch
- Chicken egg: 1 piece
- Egg yolk: 1 piece

Mix the dough by hand until uniform, not for long, no need to knead. Form a ball, wrap it in film or a bag, and put it in the refrigerator for 1 hour.

Once the dough cools, you can roll it out. Preheat the oven to 180 degrees and set it to convection mode. Dust the table with flour and roll out to a thickness of 2-3 mm.
- Wheat flour: 200 g

Cut out shapes with a mold (put the leftover dough back in the fridge) and transfer to a baking sheet lined with parchment paper or a silicone mat. Place a nut on each cookie, pressing down slightly, and bend the legs, also pressing down lightly to prevent them from opening during baking. Make eyes and a nose.

Place the baking sheet with cookies in the preheated oven for 10-11 minutes, bake until golden edges. While the first batch is baking, start on the second.
