Heat olive oil in a saucepan, add chopped onion, garlic, thyme, peeled tomatoes and sauté for 10 minutes. Add pearl barley, pour in broth and add bay leaf.
- Olive oil: 50 ml
- Onion: 1 head
- Garlic: 3 cloves
- Thyme: 3 stems
- Canned tomatoes: 600 g
- Pearl barley: 150 g
- Chicken broth: 750 ml
- Bay leaf: 3 pieces

Bring to a light boil and cook uncovered for 30-40 minutes until the grains are soft. At the end, season with salt and pepper to taste and ladle the soup into bowls. Optionally, drizzle each serving with olive oil before serving.
