Pea puree soup with smoked wings is a traditional Russian dish filled with warmth and the rich aroma of smoked foods. Its origins go deep into history when pea soups were popular among peasants due to the availability of ingredients and their nutritional properties. The thick, velvety texture of peas harmonizes with the softness of potatoes, while sautéed vegetables add a light sweetness. The smoked wings give the soup a rich, spicy flavor, making it especially warming. This soup is perfect for cold weather, restoring strength and providing a sense of fullness. It is served with fresh dill and crispy croutons that add an interesting textural play. Simple to prepare yet surprisingly rich in taste, it makes an excellent choice for a cozy home dinner.

Soak the peas in water for 3-4 hours to swell. After that, they will cook faster. After the time has passed, drain the water, rinse the peas, pour them into a pot, and set to cook. After boiling, drain the water again and rinse. Then pour in clean water equal to the amount of soup and set to cook. I call this water manipulation 'getting rid of gas'.
- Split peas: 1 glass
- Water: 3 l

When the peas boil, add the chopped potatoes, bring to a boil again, then reduce the heat and let it simmer slowly.
- Potato: 4 pieces
3
Fry finely chopped onion and grated carrot in vegetable oil. When the vegetables brown, pour in the broth and let it simmer.
- Onion: 1 head
- Carrot: 1 piece
- Vegetable oil: 1 tablespoon

At this time, we start turning the pre-removed and slightly cooled soup into a puree soup. We take an immersion blender and puree the cooked peas and potatoes. If your puree soup is too thick, dilute it with boiling water and return it to the stove.
- Split peas: 1 glass
- Potato: 4 pieces
5
We add onion and carrot.
- Onion: 1 head
- Carrot: 1 piece
6
We add the smoked wings, cover with a lid, and let simmer on low heat.
- Smoked chicken wings: 4 pieces
7
Try the salt a few minutes before serving. Smoked meats add a bit of salt to the soup, so it's risky to salt at the beginning.
- Salt: to taste
8
Serve with fresh dill and croutons.
- Dill: 1 bunch
- Crackers: to taste
