Chop the white onion as finely as possible. I realized I had grown up when phrases in cookbooks stopped scaring me.... Cut the onion into cubes the size of a match head.
- Onion: 6 heads

Next. In a cast-iron pot, we mix vegetable and butter. We add finely chopped onion and fry on high heat. We reduce the heat and simmer the onion until a pleasant light brown color. Well. Until caramelization.
- Vegetable oil: 20 ml
- Butter: 20 g

Add a tablespoon of corn flour. If you don't know what to do while the onion is frying, you can toast the flour in the pan. If the wine is already open, you can occupy yourself with something else. Fry the mixture of onion and flour for another 5 minutes, stirring vigorously.
- Corn flour: 10 g

Pour in 100 grams of dry white wine and evaporate the excess alcohol (don't yell at me, I know onion soup is made the same way).
- Dry white wine: 100 ml

Next, pour in the chicken broth and let this mixture simmer for about 10 minutes. While it simmers, whisk 2 egg yolks with lemon juice.
- Chicken broth: 1 l

Turn off the heat and continuously stir in the beaten yolks into the soup. DO NOT BOIL!!!! Also, add the coarsely chopped chicken meat. What did we cook the broth in?

By default, the broth is salty. There are black pepper and finely chopped cilantro on the plates. And toast — here it is not toasted bread!
