In a large pot, heat olive oil and sauté the onion. Once the onion is soft, add 3 cups of water and toss in the bay leaf. Bring to a boil.

Prepare the potatoes. Reduce the heat and add the potatoes. Cover with a lid and cook until the potatoes are done.

Place the salmon in a pot and cook for about 5 minutes. Then pour in the cream and stir.

Prepare a slurry by mixing starch with 1 tablespoon of water, stirring until the starch is completely dissolved. Add this slurry to the soup and cook until the soup thickens (optional, the more starch, the thicker the soup).

Add the butter, mix, and remove from heat.
