Place pork and beef bones, beef meat, and a whole chicken in a large pot. Pour in five liters of water, add celery, coriander roots, and the green part of leeks. Simmer the broth for three hours, skimming off the foam and fat, then strain.
- Beef bones: 2 kg
- Pork bones: 1 kg
- Beef ham: 1 kg
- Chicken: 1 piece
- Celery: 4 stems
- Coriander: 1 bunch
- Leek: 3 stems

Thinly slice the white part of the leek and sauté in vegetable oil until soft. Add onion to the strained broth. Also, add prunes and noodles, and cook until the noodles are done.

Season the soup with soy sauce, juice of two lemons, salt (if needed), and pepper, sprinkle with chopped cilantro, and serve. You can add sliced meat to the bowls.
