Homemade chicken noodle soup is a cozy and warming dish of Russian cuisine, known for its simplicity and rich flavor. The history of this dish roots in family dinner traditions, where hearty chicken broth with homemade noodles symbolizes warmth and care. Broth made from chicken breast gains depth of flavor from aromatic vegetables and spices. Hand-made noodles give the soup a tender texture and rich taste. Carrots and onions sautéed in oil add a light sweetness, while potatoes make the dish more filling. The noodles absorb the broth's aroma, creating a perfect harmony of flavors. This soup is not only nutritious but also healthy, easily digestible and great for family meals, warming both soul and body.

We boil chicken broth. We remove the foam and ensure the broth doesn't boil too vigorously.

When the broth is almost ready, we grate the carrot on a coarse grater and chop the onion finely.

- Onion: 1 head
3
Fry the onion and carrot in vegetable oil. Add the sautéed mixture to the broth.

Cut the potato into sticks — one small potato is enough. Add it to the noodles as well.
- Potato: 1 piece

We make noodles. We take one cup of wheat flour. We pour it in a pile on the board. We make a well in the center and crack one egg into it.

Add 2 tablespoons of water and a pinch of salt. Knead a firm dough — it should be like dumpling dough. Let it rest for a few minutes and roll it out into a thin layer. Then cut the noodles into thin strips. Once the noodles are cut, add them to the boiling broth. Add salt and spices to taste.
