Cut all vegetables into small cubes.

Sauté onion, pepper, carrot, ginger, and all celery in butter for three minutes. Add pumpkin and sauté for another two to three minutes, then add garlic, tomatoes, and juice of two limes; simmer for another three minutes. Add zucchini and fennel, simmer for another two minutes, then pour in broth and cook for another ten minutes. Before serving, garnish with lime zest and chopped parsley.
