Tomato soup with garlic croutons

Tomato soup with garlic croutons is an ode to French cuisine, blending simplicity and elegance. Its rich flavor arises from fresh tomatoes, aromatic garlic, and a hearty broth, creating a warm and comforting dish. This soup is a favorite for cool evenings, offering coziness and harmony. The croutons soaked in butter and garlic add a textural play, turning each spoonful into exquisite delight. Sour cream softens the acidity of the tomatoes, making the taste rounder and gentler. Traditionally served with cilantro or basil to enhance the dish's freshness, this soup is an ideal choice for those who appreciate a balance of rich and soft flavor notes while its simplicity makes it accessible even for novice cooks.

1
Make crosswise cuts on the tomatoes. Dip them in boiling water for 1 minute, then rinse with cold water. Peel the tomatoes. Cut the peeled tomatoes into 4-6 pieces and remove the seeds. Dice the flesh into 1 cm cubes.
- Tomatoes: 700 g
2
Clean the garlic cloves and pass them through a press. Place a thick-bottomed or non-stick pot on the fire, pour in vegetable oil, and heat the garlic in it.
- Garlic: 3 cloves
- Vegetable oil: 2 tablespoons
3
Add diced tomatoes, tomato juice, and Campbell's Homestyle Classic beef broth. (Note! The packaging of Campbell's Homestyle Classic broth recommends adding 750 ml of water, but we are making soup from fresh juicy tomatoes, so we do not add water). Bring the soup to a boil and cook for 5 minutes or until the tomatoes soften.
- Tomatoes: 700 g
- Tomato juice: 100 ml
- Campbell's Beef Broth: 375 ml
4
Cut the crusts off the white bread slices and dice the crumb into small cubes. Peel the garlic and slice it thinly. Melt the butter and sauté the garlic in it for 30 seconds. Remove the browned garlic, add the bread cubes, and stir until golden.
- Garlic: 3 cloves
- White bread: 2 pieces
- Butter: 40 g
5
Remove the pot from the heat and season the soup with sour cream.
- Sour cream: 2 tablespoons
6
Serve tomato soup with cilantro or basil.
