Tarator with yogurt and walnuts is a refreshing and light cold soup, a gem of Bulgarian cuisine. Its roots trace back to ancient Balkan gastronomic traditions where dairy products play a key role. The base of this dish is natural yogurt, giving it creaminess and a slight tang, while fresh cucumbers add a crunchy texture. Walnuts bring a rich nutty aroma and a subtle oily note, while garlic and dill enhance the flavor with freshness and spiciness. In Bulgaria, tarator is often served as an appetizer or summer dish, especially on hot days.
