Okroshka with cheese and young baked potatoes

The principle of okroshka is the best for creating a refreshing summer meal. And the simplest: when you first collect "kroshevo" or salad in a plate, and then dilute it to the consistency of soup with cold kvass or kefir - this approach to constructing soup has always surprised foreigners. And you can crumble anything inside. We decided to take Adyghe cheese instead of sausage, and replace boiled potatoes with baked ones. The result is a soup-lunch without overdoing the calories, hearty, but light. To supplement it with a second course would be completely unnecessary.

Prepare all the ingredients.

Wash the potatoes thoroughly with a brush, do not peel. Cut in half.
- Mini Potatoes: 300 g

Place the potatoes on a parchment-lined baking sheet, sprinkle with salt and pepper, drizzle with oil, and bake in a preheated oven at 180 degrees for about 30 minutes. If the potatoes are easily pierced, they are ready.

- Vegetable oil: 15 ml

Cut the avocado in half, remove the pit, set aside one half. Scoop out the flesh from the other half with a spoon and place it in a mortar.

Add mustard, finely chopped green onion, and squeeze lemon juice into the same mortar. Grind everything well with a pestle.

Cut the second half of the avocado into cubes from 7 mm to 1 cm or as you prefer.

Cut the radish, cucumber, and cheese into cubes of the same size.

Arrange the sliced vegetables, cheese, and potatoes (you can cut the potatoes into smaller wedges if desired) on plates. Add the mixture with green onions and avocado.
