Fill the cleaned and washed scars with cold water and boil without salt until the specific smell disappears.
- Beef tripe: 200 g

After that, drain the broth, fill the tripe with fresh water, and cook until done.

Finely chop the boiled tripe and strain the broth.

Place pieces of tripe in the strained broth and bring it to a boil.

In a separate bowl, thoroughly mix the egg yolks, add vinegar, and stir well. Pour the yolks into the soup and heat it to boiling but do not boil, otherwise the egg yolks will curdle.

When serving the soup, sprinkle with parsley.
