Kharcho with plums is a vibrant embodiment of Georgian cuisine, combining the rich taste of meat with the sweet-sour hint of plums. This soup, traditionally made from beef, gains a unique depth of flavor thanks to tomatoes, garlic, and aromatic spices. Sour plums add zest and freshness to the dish, while rice makes it more filling. The aroma of cilantro, parsley, and dill completes the composition, creating a harmony of flavors. Kharcho is not just a soup but a gastronomic journey to the heart of Georgia where each spoonful carries warmth, richness, and comfort. It’s perfect for a cool evening when you want to warm up with something fragrant and nourishing.
