In this recipe, the vegetable borscht achieves the perfect consistency—thick and aromatic—thanks to the combination of cabbage, beetroot, carrots, and potatoes. The light sweetness of beetroot, the tanginess of ketchup, and the softness of stewed vegetables create a harmonious blend of flavors. Add the peeled medium potatoes to the pot with water.
