Raw Tomato Sauce for Fish and Vegetables

Light, refreshing and slightly spicy raw tomato juice has absorbed all the colors of summer. Do not try to boil the sauce and serve it hot - it has nothing to do with the sauce that is boiled. It is good served with grilled fish and pickled vegetables.

Chop and mix tomatoes, tomato puree, basil, powder, and vinegar in a bowl.
- Tomatoes: 450 g
- Tomato puree: 1 tablespoon
- Basil leaves: 10 pieces
- Powdered sugar: 1 tablespoon
- Sherry vinegar: 2 tablespoons

Cover and leave at room temperature for 2 hours.

Prepare the puree mixture in a food mill.

Slowly pour the oil into the tomato mixture while constantly whisking.
- Olive oil: 100 ml

Salt and pepper to taste.
