Chickpea flour is one of the oldest ingredients in Arab cuisine, widely used for preparing various dishes. Its history dates back centuries when chickpeas were a staple food in Eastern regions. The flour has a delicate nutty note and light sweetness that adds a special flavor to baked goods and other culinary products. It is used for making flatbreads, sauces, and even desserts, serving as an excellent alternative to traditional wheat flour. One famous dish made from chickpea flour is farinata — an Italian flatbread with a crispy crust and rich flavor made with olive oil and salt.
