Spicy homemade ketchup is a true culinary art where juicy tomatoes blend with rich spices to create a harmony of flavors. This sauce comes from European cuisine, where every housewife could experiment with the ingredients, giving the dish her unique touch. Its taste is rich, tangy, and slightly sweet with spicy notes of fragrant pepper, coriander, and paprika. The light acidity of wine vinegar perfectly balances the richness of the spices while chili pepper adds a pleasant heat. Chop the tomatoes, bring them to a boil in a deep pot or pan, and cook for 5 minutes.
- Tomatoes: 2 kg

Pass the mass through a sieve. Pour the puree back into the pot.

Cut the onion into large half-rings, crush the garlic, do not cut the chili pepper and add it to the tomatoes (optional). Cook on low heat until the onion and garlic soften for about 20 minutes.
- Salad onions: 1 piece
- Garlic: 3 cloves
- Chili pepper: 1 piece

Place bottles or jars with screw caps in an oven preheated to 130–140 degrees for 15–20 minutes.

Remove the pepper from the puree, strain the mixture through a sieve again, and return it to the pan.
- Chili pepper: 1 piece

Add all remaining spices, sugar, salt, and vinegar. Boil for 5 minutes and be sure to taste, adjusting the amount of spices to your liking if necessary.
- Sugar: 100 g
- Salt: to taste
- Wine vinegar: 100 ml
- Sweet paprika: 3 teaspoons
- Cinnamon: 1 teaspoon
- Ground coriander: 0.5 teaspoon
- Ground ginger: 0.5 teaspoon
- Ground cloves: 0.5 teaspoon
- Ground allspice: 0.5 teaspoon

If the sauce is too runny, it can be boiled for 5 minutes on maximum heat. After cooling, the ketchup will thicken a bit.

Pour the ketchup into bottles or jars, close with lids, and turn upside down. Store at room temperature.
