Roast walnuts and peeled almonds. Place walnuts in a towel and rub them against each other to remove the skin.
- Almond: 160 g
- Walnuts: 130 g

Place the peeled nuts in a blender with anchovies, garlic, herbs, and cheese. Season to taste and mix. With the blender running, gradually add olive oil in a thin stream. Finally, add vinegar and check for taste - you may need more salt to taste.
- Anchovy fillet: 4 pieces
- Garlic: 2 cloves
- Chopped parsley: 140 g
- Crushed basil leaves: 20 g
- Grated Parmesan cheese: 30 g
- Olive oil: 0.8 glass
- White balsamic vinegar: 1 tablespoon
