Tear off the leaves from the parsley.

Bring salted water to a boil in a pot. Add parsley leaves, reserving 2 tablespoons. Boil for about 20 seconds, then quickly transfer to ice water.
- Parsley: 2 bunchs

Pour out and transfer to a blender. Blend until pureed.

Place the puree in several layers of cheesecloth and squeeze out the juice.

In a bowl, mix parsley juice, olive oil, and a little salt.
- Extra virgin olive oil: 0.3 glass
- Coarse salt: to taste

Pour into a bottle and add the remaining fresh parsley leaves. Store in the refrigerator.
