Remove the pits from the plums and cut them into 4 pieces. Transfer to a saucepan.
- Plums: 700 g

Add minced garlic, sugar, vinegar, water, salt, ginger, black and allspice, cayenne pepper, and a cinnamon stick.
- Garlic: 2 cloves
- Brown sugar: 0.3 glass
- Apple cider vinegar: 0.3 glass
- Water: 0.3 glass
- Salt: 0.5 teaspoon
- Ground ginger: 0.5 teaspoon
- Ground black pepper: 0.3 teaspoon
- Ground allspice: 0.3 teaspoon
- Cayenne pepper: 0.1 teaspoon
- Cinnamon sticks: 1 piece

Bring to a boil, stirring, reduce heat and cook, stirring occasionally, until the plums turn into puree, about 35-45 minutes.
