Preheat the oven to 200 degrees.

You will need 1 large head of garlic or 2 small ones. Remove the outer skin, leaving it only on the cloves, but do not damage the integrity of the head. Cut off the top of the head, slightly trimming the tops of the cloves. Place on a sheet of foil and drizzle with 1 tablespoon of olive oil. Wrap it up and send it to the oven for 40 minutes to 1 hour, until the garlic is very soft. Unwrap and let it cool slightly.
- Garlic: 1 head
- Extra virgin olive oil: 4 tablespoons

Squeeze the garlic pulp from the cloves and transfer it to a blender. Add the remaining oil, vinegar, lime juice, salt, and pepper. Blend until smooth.
