Pistou is a traditional French sauce from Provence that resembles Italian pesto but without nuts. Its history is rooted in Mediterranean cuisine where fresh herbs and garlic play a significant role. The spicy, rich flavor of basil combined with the aroma of garlic and the tenderness of Parmesan makes this sauce an ideal complement to pasta dishes, soups, and vegetables. The uniqueness of pistou lies in its texture: velvety and light, revealing each ingredient fully. It is used as a fragrant dressing for traditional Provençal vegetable soup or as a sauce for pasta. This sauce is best made and consumed fresh to enjoy its vibrant taste and aroma. Pistou is the quintessence of simplicity and elegance in French cuisine.
