Spicy-sweet pepper vinegar is a fragrant condiment rooted in Arab culinary traditions. Its rich flavor—a blend of fiery chili heat, the depth of black pepper, and the sweet tang of vinegar—turns any dish into a gastronomic journey. This vinegar not only adds zest but also enhances the natural flavors of meats, vegetables, and sauces. It pairs perfectly with marinades, salad dressings, and Eastern dishes. Historically, it was used as a way to preserve peppers and impart a unique spicy note to dishes. It is made simply: peppers are cut up and soaked in hot vinegar with salt and sugar, then after steeping acquire a deep, rich flavor. This vinegar is an elixir that combines fiery heat with exquisite sweetness.

1
Make long cuts on each pepper and place them in a clean wine bottle. Add black peppercorns and set the bottle on a clean kitchen towel.
- Red Long Chili Pepper: 6 pieces
- Black peppercorns: 0.5 teaspoon
2
In a pot, mix vinegar, salt, and sugar, bring to a boil, and pour the mixture into a bottle, leaving 3 cm from the top.
- Vinegar: 2.5 glasss
- Coarse salt: 1 teaspoon
- Sugar: 1 glass

After 10-15 minutes, the peppers will absorb some marinade. Pour vinegar into the bottle, leaving 1.5 cm unfilled. Close tightly with a lid and let cool. Then transfer to the refrigerator.
