In a large bowl, mix ground beef, chopped onion, thyme, pepper, rosemary, cilantro, fennel seeds, cayenne pepper, lightly beaten egg, and duck fat (optional).

- Thyme: 2 teaspoons
- Ground black pepper: 1 teaspoon
- Fresh rosemary: 1 teaspoon
- Dried cilantro (coriander): 1 teaspoon
- Fennel seeds: 1 teaspoon
- Cayenne pepper: 1 teaspoon
- Chicken egg: 1 piece
- Duck fat: 2 tablespoons
- Salt: to taste

Divide the mixture into 4 equal portions and shape into patties slightly larger than the buns. Place the patties in the refrigerator to chill and firm up.
