Prepare the sauces. For the first, mix Greek yogurt, finely chopped cilantro, and lemon juice. For the second, combine mayonnaise and Dijon mustard; for the third, mix tomato sauce and grain mustard. Cover and refrigerate if necessary.

Preheat the grill to medium heat. Grill the sausages, turning constantly, for 10 minutes. Remove from the grill and keep warm.

Slice the onion into rings. Peel the apples and cut them into thin slices. Heat oil on the grill surface. Sauté the onion and apples on different parts of the grill for 5 minutes until they are soft and golden brown. Remove from the grill and set aside.
