Remove the seeds and core from the pepper and cut it into large pieces. Place them skin-side up under a preheated grill and roast until the skin blackens and puffs up. Cool in a plastic bag, then peel and cut into thick strips.

In a large bowl, mix lamb mince, lightly beaten egg, chopped onion, crushed garlic, cumin, chili sauce, chopped pine nuts, finely chopped mint and Italian parsley, cumin, and chili sauce. Knead by hand and roll the mixture into about 4 equal balls. Shape them into patties about 9 cm in diameter.
- Minced lamb: 0.5 kg
- Chicken egg: 1 piece
- Onion: 1 piece
- Garlic: 3 cloves
- Pine nuts: 35 g
- Mint: 8 g
- Italian parsley: 5 g
- Ground cumin (zira): 1 teaspoon
- Chili sauce: 2 tablespoons

Heat olive oil in a skillet and fry the flatbreads for 6 minutes on each side — or until they brown and are cooked through, then drain on paper towels.

Cut the buns and toast them on both sides. Spread hummus on the cut side of the bun, then add arugula, roasted peppers, and cucumber cut into strips. Place the meat patty on the salad and cover with the other half of the bun.
