Vegetarian burgers are a true celebration of taste and health inspired by European cuisine. Their base consists of fragrant patties made from yellow peas and roasted vegetables, seasoned with cumin, mustard seeds, and anise, giving the dish a wonderful spicy note. Honey oat buns baked in the oven add tenderness and softness. The combination of fresh salad, crunchy cucumbers, juicy tomatoes, and tangy pickled peppers complemented by balsamic cream and homemade mayonnaise makes the flavor rich and balanced. First, preheat the oven to 230 degrees. Grind the oats in a blender and mix them with flour, baking powder, and salt. Mix honey with a tablespoon of oil and then with milk. Combine both mixtures. Roll the resulting dough into one large ball or several small ones to make buns, and place them in a mold (my dough turned out too liquid, so I ended up with one flatbread) and send it to the oven for 20 minutes.
- Hercules: 1 glass
- Whole grain flour: 1 glass
- Honey: 1.5 tablespoon
- Vegetable oil: 3 tablespoons
- Milk: 1 glass

Soak the peas overnight. Change the water and boil for 20-30 minutes, avoiding overcooking. Drain the water and blend. Heat a pan over the fire and add a spoon of oil. Add mustard seeds, cumin, and anise to the oil and sauté until they crackle. Then add onion and carrot, sautéing until the onion is translucent. Now add the eggplants and simmer until soft. Finally, add a bit of turmeric and fry for another half a minute.
- Yellow peas: 0.5 glass
- Onion: 1 piece
- Carrot: 0.5 piece
- Eggplants: 0.5 piece
- Turmeric: 0.5 teaspoon
- Caraway: 0.5 teaspoon
- Black mustard seeds: 1 teaspoon
- Anise (star anise): 0.5 teaspoon
- Vegetable oil: 3 tablespoons

Mix the vegetables with peas. Shape four patties (burgers), dip them in beaten egg, and fry for half a minute on each side.
- Yellow peas: 0.5 glass
- Onion: 1 piece
- Carrot: 0.5 piece
- Eggplants: 0.5 piece
- Chicken egg: 1 piece

Cut the resulting bread flatbread into four parts and lengthwise (if buns are formed, then only lengthwise). Spread mayonnaise on the bottom half of the flatbread. Place half a leaf of lettuce, then a patty, a couple of slices of cucumber, a bit of balsamic sauce, a couple of slices of tomato, a spicy pickled pepper, and cover with the second half of the bread. Don't forget to repeat four times!
- Homemade mayonnaise: 4 teaspoons
