Focaccia sandwiches with arugula, mozzarella, pickled red onion, and tomatoes are a true delight for Mediterranean cuisine lovers. Their base is aromatic focaccia, a traditional Italian bread with a tender crust and airy texture. The filling combines the spicy freshness of arugula, the tenderness of mozzarella, and the sweet tang of pickled onions and tomatoes, creating a harmony of flavors. Red wine vinegar adds a touch of sophistication while mayonnaise adds creaminess. These sandwiches are perfect for a light lunch, picnic, or wine snack. They are easy to prepare but surprise with their rich flavors and refined ingredients. Enjoy!
