Start with chicken breast. Place in a pot: 3 cloves of garlic, chili flakes, shallot, cilantro, anise, 1 tbsp ginger, chicken, and salt in a medium pot, and add enough water to cover everything.

Bring to a boil over medium heat and cook until done (until the chicken is firm to the touch).

Remove the cooked chicken from the pot and set aside to cool.

While the chicken cools, mix the sauce ingredients: sesame, tamarind, sugar, 2 cloves of garlic (finely chopped or grated), 1 tsp grated ginger, rice vinegar, lime juice, paste. The sauce will be thick; if you want it thinner, add a small amount of water and a bit more lime juice to taste.

Use your fingers or two forks to shred the chicken into small pieces.
