Green salad with farik and peas is a harmonious blend of fresh greens and the deep aromas of Arabic cuisine. Farik, known for its nutty note and light smokiness, gives the dish a unique texture while green peas add a sweet touch. Parsley, mint, and celery leaves make the salad not only refreshing but also rich in aromas. The dressing of lemon juice, olive oil, and cumin brings a balance of acidity, spice, and softness. This dish is perfect for a light dinner or as an accompaniment to meat and fish dishes. Inspired by traditional Arabic motifs, it pairs wonderfully with hummus, lavash, and dairy sauces to create a vibrant and memorable flavor.

Heat a medium-sized skillet over medium heat and add the farik. Toast in the dry skillet, stirring occasionally, for 2-3 minutes until the farik releases its aroma. Add 2 cups of water, salt, and bring to a boil.

- Roasted cumin (zira): 0.5 teaspoon
- Finely chopped garlic: 1 clove

Reduce the heat, cover with a lid, and cook for 20-25 minutes until the water evaporates. Turn off the stove and open it. Cover the pot with a paper towel and then cover it again with the lid. After 10 minutes, open the lid and cool.
