In a large pot of boiling salted water, cook the rice noodles according to the package instructions; drain, rinse under cold water, and set aside for a while.
- Rice noodles: 450 g

In a medium-sized pot, boil shrimp in salted water for 2 minutes until they turn pink. Use a slotted spoon to transfer the shrimp to an ice bath. Also, boil squid rings and place them on ice.

In a large bowl, mix shrimp, squid, and crab meat with olive oil, lemon juice, zest, pepper, and garlic. Add herbs and mix well. Season with salt and pepper. Add noodles and mix well again. Sprinkle with salt and pepper once more and drizzle with olive oil if desired.

- Crab meat: 220 g
- Extra virgin olive oil: 200 ml
- Freshly squeezed lemon juice: 6 tablespoons
- Lemon zest: 1.5 tablespoon
- Chili pepper: 1 piece
- Chopped parsley: 20 g
- Fresh mint: 10 bunchs
- Green onions: 2 bunchs
- Salt: to taste
- Freshly ground black pepper: to taste
- Extra virgin olive oil: 200 ml
