In a medium-sized pot, bring sugar and 2 cups of water to a boil. Stir the mixture to dissolve the sugar. Remove from heat. Scrape the seeds from the vanilla pod and add the pod to the water along with lemon zest, star anise, juniper berries, Sichuan pepper, pink peppercorns, rose petals, and lavender. Let it sit for 20-25 minutes for the spices to infuse their aroma into the syrup. Strain through a fine sieve into a medium bowl. Discard the spices. Cool the syrup until cold.
