Bring 2 liters of salted water to a boil. Add quinoa, cover with a lid, and reduce the heat to medium. Cook for 12-14 minutes until the quinoa is tender and 'tails' appear on the grains.

Preheat the oven to 200°C. Spread the pine nuts on a baking sheet and roast for 3-4 minutes until lightly golden. Let cool and transfer to a large serving bowl.
- Pine nuts: 150 g

Drain the water from the pot with quinoa, rinse the grains with cold water. Drain the water. Transfer the quinoa to a bowl with pine nuts, add cucumber, tomatoes, onion, and parsley.
