First, prepare the sauce: mix the juice of one large orange with 1-2 tablespoons of olive oil.

Finely chop fresh white cabbage (1/2 small head or 1/3 large), lightly salt it, and actively knead with your hands. If the cabbage is young – knead gently; if it's mature with thick veins – knead more vigorously.

Grate one fresh carrot finely on a large grater.

Mix all ingredients, season with salt and pepper to taste, and dress with orange sauce. Let the salad sit for an hour. With young cabbage – 30 minutes.
