Wash the potatoes well with a vegetable brush and slice them into circles about 0.5 cm thick. Transfer them to a pot with 3.5 liters of water, bring to a boil and cook for about 5 minutes. Drain the water, then add half a teaspoon of salt and pepper, 3 tablespoons of vinegar to the potatoes and mix gently. Set aside to cool for 30 minutes.
- Red Potatoes: 1300 g
- White wine vinegar: 6 tablespoons
- Salt: 1 teaspoon
- Ground black pepper: 1 teaspoon

Meanwhile, finely chop the red onion and tarragon. In a small bowl, mix the remaining vinegar, pepper, salt, oil, and mustard. Drizzle this mixture over the cooled potatoes, sprinkle with onion and tarragon, and mix again. Transfer to a large dish and serve.
