Korean Carrots

Soviet and post-Soviet Koreans living in the Far East (they are also called Koryo-saram) came up with this simple but incredibly delicious salad. All you need for it is carrots, vegetable oil, vinegar, garlic, ground pepper, sugar and salt.

Prepare the necessary ingredients.

Grate the carrot on a special grater or a regular fine grater.
- Carrot: 1 kg

Crush garlic into the carrot.
- Garlic: 1 head

Add salt and sugar.
- Salt: 1 teaspoon
- Sugar: 1 teaspoon

Add black pepper and coriander. Pour in vinegar.
- Ground black pepper: 0.5 teaspoon
- Ground coriander: 1 teaspoon
- Vinegar 9%: 3 tablespoons

Chop the onion finely.
- Onion: 0.5 head

Fry it in vegetable oil.
- Vegetable oil: 30 ml

Once the onion turns golden, remove it from the heat, add red pepper and stir.
- Ground red pepper: 0.5 teaspoon

Add spiced oil to the carrot, straining it through a sieve; the onion is not needed.

Mix everything well and let it steep for a couple of hours.
