Chop half of the tomatoes finely and mix with finely chopped green onions, parsley, garlic, season with olive oil and lemon juice, then set aside.

Fry the bacon slices well, blot with paper towels to remove excess fat, and let cool.

Cut the remaining tomatoes into large cubes and remove the liquid part (the center). Mix the boiled chopped potatoes, quartered eggs, and tomatoes, season with salsa, and mix well.
