Separate the thyme leaves from the stems to get 3 tablespoons. Add a pinch of sea salt and crush in a mortar. Add 2 tablespoons of extra virgin olive oil and the juice of half a lemon, and mix well.
- Fresh thyme: 1 bunch

Cut the tomatoes in half diagonally and chop them roughly at random. Add a little salt (remember that the sauce already contains salt) and pepper, drizzle with olive oil. Add slices of thinly sliced dried meat and mix.
