Shrimp and avocado salad is a true delight for gourmets, inspired by Pan-Asian cuisine. Its tender royal shrimp, sautéed in butter and infused with the freshness of lemon juice, create a harmony of flavors combined with buttery avocado and sweet cherry tomatoes. The composition is complemented by crunchy green lettuce and bell peppers, adding lightness to the dish. Red sweet onion adds spicy notes, while pine nuts provide an exquisite texture. The dressing made from olive oil and balsamic vinegar subtly highlights the ingredients, making the salad an ideal choice for a light dinner or refined lunch. It not only refreshes but also satisfies while remaining airy and balanced in taste.

It's better to use large royal shrimp. However, medium-sized ones can also be used. It's best not to take very small ones, as they shrink during cooking. You can save time by using pre-peeled ones. Thaw the shrimp (naturally), clean them (if needed), and pat them dry with a paper towel. Sauté in butter. To lightly fry them, don't keep them too long (about 3 to 5 minutes on high heat). Set aside and let them cool a bit. Squeeze juice from 1/4 or 1/6 of a lemon over them.

Green salad can be iceberg, romaine, or arugula. To your taste. Rinse and let it dry (excess moisture is not needed). Then tear it by hand.

Tomatoes — ideally — are cherry. The main thing is that they should be sweet. Cut into 2 or 4 pieces.
- Cherry tomatoes: 8 pieces

Bell pepper - red, orange, or yellow. Cut into elongated strips. Or to your taste.

Cut the avocado to the pit and split it into 2 halves. Insert a knife into the pit and twist it to carefully remove it. Peel the skin. Cut into not very small pieces.
- Avocado: 1 piece

Onions - it's better to use red sweet onions. They are less sharp. But if you like spicy, you can also take regular white ones. It's a matter of taste. It should be cut into thin half-rings.
- Sweet red onion: 0.5 piece

Mix all ingredients in a large bowl to prepare the salad. Olive oil, vinegar, salt, and spices work well as dressing. You can dress in a large bowl or pour over each serving separately, topping with pine nuts.
