Drain the brine from the cabbage and transfer it to a deep bowl. Cut the apples (preferably sour, such as Granny Smith) into four pieces and remove the seeds.

Slice the apples into thin wedges and immediately mix with the cabbage to prevent browning. Cut the ham into strips and add to the cabbage with the apples.
